Paraiso Azteca, Mina's Latin Restaurant, is an astounding Mexican restaurant and the best-kept secret in the Front Range area. The restaurant is located in downtown Erie, about a 26 mile drive from Denver (but well worth the drive!). This place is not the kind of place that comes to mind when you think "Mexican restaurant". The menu offers an array of unusual and incredible dishes, and the food is fit for kings. The portions are large, so bring an appetite and be prepared to take home some leftovers. (And be the envy of your co-workers in the lunch room the next day!) Mina changes her desert menu quite often, and there's always something great on it.
Paraiso Azteca was formerly located in a smaller shop a few blocks down and called "Casa de Mina". They quickly outgrew the small shop as word spread about Mina's great cooking.

Mina's is great!
Whenever I have out-of-town guests flying into Denver, I always take them up to Erie for dinner at Mina's. My out-of-town friends who have been there before need no coaxing -- they demand a trip to Mina's! --Simmons 15:14, 4 September 2006 (MDT)
